There is nothing like homemade granola. You control what goes into it and let’s face it, it’s a lot cheaper than shop bought and a whole lot tastier into the bargain. I love it and wouldn’t feed my family anything less.
300g rolled oats
200g mixed nuts, chopped into chunks
(I used almonds, hazelnuts, brazil nuts, walnuts)
40ml sunflower or coconut oil
Pinch of salt
50g desiccated or sliced coconut
100g dried fruit and berries of your choice
1 egg white, about 40 – 50g
Preheat the oven to 170C/150C fan. Line a baking tray with baking parchment.
Place the oil, honey and salt into a small saucepan and gently heat until amalgamated then take off the heat.
In a large bowl, mix together the oats, nuts and coconut and then stir in the honey mixture until well combined.
In a separate bowl, beat the egg white until frothy and stir into the oat mixture. Tip and spread everything onto the baking tray and bake for 30 – 35 minutes. Stir gently every 5 minutes to make sure the mixture browns evenly.
Remove from the oven and leave to cool. Once cooled, stir in the dried fruit and store in an airtight container.
