These are quick and easy to prepare. Oat cookies have always been a favourite of mine and these have the bonus of dates and nuts, just perfect with my cup of coffee.
Date, Oat & Walnut Cookies
175g butter, softened
225g dark brown sugar
100g caster sugar
2 tsp vanilla extract
1 egg yolk
250g self raising flour
100g porridge oats
75g dates, chopped
75g walnuts, chopped
Preheat the oven to 180C/160C fan. Line two baking sheets with baking parchment.
In a bowl, I use an electric hand whisk, beat together the sugars, butter and vanilla extract until pale and creamy. Beat in the egg and egg yolk until well incorporated then stir in the flour, oats, dates and nuts.
Place drops of the mixture onto the prepared sheets, leaving plenty of room between them to allow them to spread.
Bake the cookies for 12 -15 minutes, until the edges are beginning to brown but the centres are still soft.
Transfer the cookies to a cooling rack to cool completely.
