30 minThese are very quick and easy to make and are a good standby recipe if you find yourself with unexpected guests arriving soon or your children announce at their bedtime that there is a bake sale the next day at school.
Chocolate Orange Cheesecake Brownies
INGREDIENTS
For the Brownies
- 175g butter
- 3tbsp cocoa powder
- 200g caster sugar
- Finely grated zest of 1 unwaxed orange
- Few drops of orange essence
- 2 eggs, beaten
- 125g plain flour
For the Cheesecake
- 250g cream cheese
- 40g caster sugar
- Few drops of orange essence
- 1 egg
METHOD
- Preheat the oven to 180C/160C fan. Line a 28cm x 18cm baking tin with baking parchment.
- Place the butter into a saucepan and heat on a low heat until just melted. Remove the saucepan from the heat and stir in the cocoa powder, sugar, orange zest and essence.
- Beat in the eggs, then add the flour and stir until thoroughly combined.
- Pour the mixture into the prepared tin.
- To make the cheesecake, place the cream cheese, sugar, orange essence and egg in a bowl and beat together until smooth.
- Place dollops of the cheesecake mixture over the chocolate brownie mixture and using the back of a spoon or a pallet knife, lightly swirl the mixture together.
- Bake in the preheated oven for 25 – 30 minutes until just firm to the touch.
- Leave to cool in the tin before cutting.
