These are very quick and easy to make and are a good standby recipe if you find yourself with unexpected guests arriving soon or your children announce at their bedtime that there is a bake sale the next day at school.

Chocolate Orange Cheesecake Brownies

INGREDIENTS
For the Brownies
  • 175g butter
  • 3tbsp cocoa powder
  • 200g caster sugar
  • Finely grated zest of 1 unwaxed orange
  • Few drops of orange essence
  • 2 eggs, beaten
  • 125g plain flour
For the Cheesecake
  • 250g cream cheese
  • 40g caster sugar
  • Few drops of orange essence
  • 1 egg
METHOD
  1. Preheat the oven to 180C/160C fan. Line a 28cm x 18cm baking tin with baking parchment.
  2. Place the butter into a saucepan and heat on a low heat until just melted. Remove the saucepan from the heat and stir in the cocoa powder, sugar, orange zest and essence.
  3. Beat in the eggs, then add the flour and stir until thoroughly combined.
  4. Pour the mixture into the prepared tin.
  5. To make the cheesecake, place the cream cheese, sugar, orange essence and egg in a bowl and beat together until smooth.
  6. Place dollops of the cheesecake mixture over the chocolate brownie mixture and using the back of a spoon or a pallet knife, lightly swirl the mixture together.
  7. Bake in the preheated oven for 25 – 30 minutes until just firm to the touch.
  8. Leave to cool in the tin before cutting.
